Why did you go Vegan?
It was the trifecta to be honest. I was learning about animal agriculture (ethics) while getting a masters in nutrition (health) when a lot of information was starting to come out about environmental impacts of animal use.
What is your go-to breakfast when you are on the run?
I always prep breakfast 😀 I do overnight oats with blueberries and walnuts (great combo for the brain)!!!
What is your favorite vegan or accidentally-vegan dish at a restaurant?
Probably the tofu pepiada at Sazon in Philly – Venezuelan cuisine. The reina pepiada was named after Susana Dujim, the first Venezuelan international beauty queen.
What is your favorite vegan dish to cook?
Mmmm, Chana Masala. I love Indian cuisine and the spices are full of healthy antioxidants.
What are your five staple groceries?
Chocolate, avocados, peanut butter, tempeh, and Turkish figs
Where do you get your protein? 😉
Ha! So glad you asked!!! Beans (so many different kinds), lentils, tempeh, tofu, quinoa, peanut butter, walnuts, cashews, and some from all my veggies!
Do you live with any companion animals?
Yes!

I strictly use coconut oil as lotion these days. I buy a big glass jar of it and avoid plastic too!
What has been your favorite memory/moment with PAN?
All of them! From my first encounter volunteering at the PAN table at the Green Fest, to becoming a mentor and participating in my first pledge event, to giving nutrition talks, and even hosting a few pledges in NYC. Such a great organization with so many dedicated people <3
